Serves 4 | Prep time: 15 minutes | Cook time: 15 minutes | EGG-FREE, GLUTEN-FREE, NUT-FREE, VEGETARIAN, 30 MINUTES OR LESS
Directions:
1. Fill a pot with the water, add the salt, and bring to a boil over high heat. Add the polenta, lower the heat to medium, and whisk for 5 minutes, until the polenta starts to thicken. Cook for 5 more minutes, stirring frequently. Remove from the heat and let cool for 3 minutes.
2. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
3. Transfer the polenta to a clean work surface, spread it out to 1-inch thick, and let it cool completely.
4. With a sharp knife, cut the polenta into 2 1/2-inch, toddler-size squares and place them on the prepared baking sheet.
5. Spread 1/2 teaspoon tomato sauce on each square and top with a few pieces of mozzarella, 1 or 2 cherry tomatoes, 1 baby spinach leaf, 1/2 olive, and a sprinkle of oregano. Drizzle with olive oil.
6. Bake for 5 minutes, until the mozzarella melts. Serve warm, or cooled to room temperature for toddlers.
Make it fun:
Have your toddler help you cut out the polenta using cookie cutters in fun shapes. Don’t worry about wasting the scraps. Polenta is like Play-Doh: combine the scraps together, reroll them, and cut out more shapes.
