Black Bean Quinoa Burgers
These burgers have been the most popular meal in our house for ten years, ever since my sister served Nick and me her version when we were first dating. Now I find myself mixing up a batch every time I feel like we have nothing for dinner, quickly realizing that quinoa, black beans, and an onion are almost always in the pantry.
Oven-Baked Falafel with Garden Radishes, Cucumber, and Pea Shoots
My sister Anna made us a version of these falafel rounds almost ten years ago. I immediately quizzed her on the recipe and have been serving it ever since. Our favorite method is to fill toasted pita pockets with falafel balls, then stuff in favorite crunchy vegetables, such as carrots, sprouts, radishes, cucumbers, or pea shoots. Here, I have included a simple yogurt sauce, but spreading the pitas with hummus works fine, too.
Slow Cooker Indian Butter Chicken with Sweet Peas
I encourage you to make this meal your own by choosing toppings and sides that are your family’s favorites or that need to be eaten up. You know the ones-like that last sprinkle of nuts taking up precious storage space and staring at you, longingly, from the cabinet. I typically boil up some rice and toast slivered almonds with a handful of flaked coconut, but warm naan bread is another good accompaniment.
Splayed Roast Chicken with Spring Vegetables
You should make this dinner on the first warm evening in spring, and here is how: Pop the cast iron skillet in the oven to warm up. Everything else can be prepared in just ten minutes. Now, go outside. Take a quick walk, dust off your bike, push your baby on the swing. If your kids want to help, have them snap the asparagus, or (if your children are anything like ours) inquire about the details of the dead chicken (Where are its feathers? Did it have a head?). Forty minutes later, come back to the kitchen, put the chicken in the oven, and remind the kids that you have Strawberry-Orange Slab Pie for dessert-they will be psyched.
Quick Citrus–Dark Chocolate Cake
This cake is as dense and rich as a fudge brownie, but it’s made with antioxidant-rich dark chocolate and unrefined coconut sugar for a healthier take on a flourless chocolate dessert. A thin slice goes a long way. I like to top the cake with fresh whipped cream and thin blood orange slices for a citrus kick.
Grilled Flatbread Bar
This meal looks festive and fancy on the table, and it’s a great way to use up any garden vegetables, half jars of sauces, or small hunks of cheese lying around. The pizza dough can be store-bought or homemade. As with any great topping-focused meal, the goal here is to let everyone create the flatbread of their dreams. Yes, sometimes my kids just eat grilled pizza dough and pass on all the colorful vegetable additions, but such is life.
